Flank Steak - thick enough to slice horizontally
Spinach
Feta Cheese (or goat cheese, bleu cheese, whatever you like)
Wooden skewers, soaked in water
Carefully cut the flank steak in half horizontally, leaving it attached at one end. Place the meat between 2 pieces of plastic wrap & pound gently until thin and pliable (be careful not to get it too thin). Wash spinach and remove stems. Place a handful at one narrow end of the steak, then sprinkle feta next to spinach. With both hands, carefully roll the steak with spinach and feta inside, and secure with skewers placed lengthwise into the roll. Grill until done, then slice into rolls.
